Peppermint Chocolate Fudge (plant-based, superfoood)


This easy peppermint chocolate fudge is made with only 5 ingredients and takes 5 minutes to make and 1 hour to set. It is infused with amazing peppermint essential oil and is gluten & dairy free.

Instructions

  1. Add all ingredients to a blender/food processor/thermomix and blend until smooth.
  2. Spoon the mixture into a loaf tin lined with baking paper and smooth over with a spatula.
  3. Place into the freezer for approximately 1 hour to set.
  4. Take out of the freezer and cut into desired portion sizes.

Notes

Store in the refrigerator

Looks good, but how much is 250 grams of cashew butter?

I tend to go by 28 grams equals one ounce. Thus they are calling for roughly nine ounces of cashew butter.
Have you priced cashews lately?

I get nuts, usually from bulk bins or on line and make my own nut butter. It is not hard, just place nuts in processor with an oil of choice, 1 to 2 TBSP. Some nuts are better soaked first.
I want to find a lower sugar alternative for dates.
